Cheap ribs and stubbornness.
Reggie started barbecuing as a hobby, stationed in Germany. Pork ribs were cheap there, so he bought a lot of them and experimented with rubs and seasonings until he found one that tasted right — and wasn't hard to make again. That last part matters: a great recipe you can't repeat is just a good day.

Back stateside, he kept at it — more meats, more flavors. Friends noticed. Then friends-of-friends noticed. Pretty soon he was the one cooking at every barbecue anyone threw.

Night Stalker's Store
One day it hit him.
He could sell his own barbecue. He saved up, built his own concession trailer, and parked it at the Night Stalker’s Store — where the line kept growing. A first restaurant followed, a place to learn the restaurant business for real.

That road led to the restaurant standing today on Trenton Road in Clarksville, Tennessee — brisket platters, ribs, pulled pork leaning Carolina with a vinegar sauce, and burnt ends worth planning a day around.

Now it leaves the building.
Three decades after those first racks of ribs, the smoke hasn’t changed. What changed is the reach: once a week we pull it off the pit, seal it at temperature, pack it cold, and hand it to the carrier. Same fire. Same wood. Out the door every week.
